6 gluten-free tortillas
6-8 chicken thighs skinless
1-2 red onions
2 red peppers ,cut into strips
1 chunky slice of peeled pumpkin, cut into strips
1 tin sweetcorn
sour cream, grated cheese to sprinkle
Fajita seasoning mix:
1/4 tbsp chilli powder
1.5 tbsp sweet paprika
1/2 tbsp ground cumin
1/2 tbsp garlic powder
1/2 tbsp ground coriander
1/2 tbsp dried oregano
1 tsp sugar
1/2 tsp salt
1/4 cayenne pepper
1.Mix all fajita seasoning ingredients in the bowl
2. Cut the chicken thighs into thin strips.
3. Mix the chicken strips with fajita seasoning in a bowl.
4. Preheat some olive oil in a frying pan and add the chicken, stir and fry 3-4 minutes
5.Add strips of mix peppers, red onion and pumpkin
6. Add the sweetcorn, stir together and fry for another 3-4 minutes while continuously stirring.
7. Bake tortilla baskets in the oven. Place tortilla in the form and bake for 1-2 minutes in 200 ` C

8.Place meat and vegetables in the basket , pour 1 tbsp sour cream on meat in each basket or sprinkle with grated cheese
