How it all started and what is the aim of FOOD-E-LAND
My name is Agy and I'm the owner of
food-e-land.
I looove cooking! I’m also a qualified Chef and a Nutrition Consultant.
I've finished my Nutrition study with a Merit Certificate and have been proposed to study counselling but an unexpected illness of my son was a life priority.
I also love Biology. The result of this love was my master's degree in Human Biology.
My other big passion is decorating and photography.
I love quality pictures and I believe good pictures are a must to have respect and attention to the readers.
Above all, I am a mother of two wonderful sons - Fabian and Astin.
Enough about me for now,
this is the story of Food-e-Land.
I was diagnosed with GLUTEN INTOLERANCE and IBS but
not Celiac Disease.
I suffered for 8 years with chronic digestive issues, saw many doctors, underwent several GI procedures.
There was no cure to help my condition. I was so discouraged.
That’s when one of the doctors has mentioned trying a gluten-free diet because it may help.
When I first went gluten-free I found it difficult to find recipes that were easy to make. A lot of the recipes had expensive, hard to find ingredients that took a lot of time to cook.
My mum was diagnosed with Diverticulosis
Another challenge ahead of me and my dishes as my mum diet would need now a high-fibre diet full of fresh and dried fruits, vegetables, beans, pulses, nuts, cereals and starchy foods. I love vegetables so was a pleasure to use them even more in my kitchen.
This is when I started to create more of my vegan dishes.
Good job. I love to experiment in the kitchen and Mother Nature is giving so many goods and flavours so I can learn about them and adapt to our needs. Otherwise, three different food requirements in one home would be difficult to achieve...
i find out my younger son has developed type 1 Diabetes.
As a mother it was devastating news for me, however being a chef/nutritionist and an individual with a medical background it was much easier for me to deal with it.
Vegan and Gluten-free food I was already familiar with helped too.
This is when it was the time to venture into sugar free meals and cakes to curb the cravings in the house.
The birth of food-e-land Facebook page and the beginnings of sharing my recipes with the world.
I struggled for a while because I was stubbornly trying to replace gluten recipes with gluten-free ones until I realized that this was not the way to go.
I started to enjoy the benefits of the ingredients themselves and create my own, Unique, gluten-free recipes.
Just in time!
If I hadn't changed my mind,
I would have hated what I love - eating and cooking.
I disenchanted the kitchens. Cooking has become my great passion again, in which I put my whole heart, and the dishes are repaid with taste.
Food-e-Land was born here in a form of a Facebook group and page at first.
Food-e-Land blog was born.
This is when I decided to ask my talented, creative son to develop a blog for the food-e-land. The whole amazing design of website is his hard work. He put all his heart to give me the place to express myself and my cooking along with providing people with valuable recipes that don't fail. This is just the beginning.
