A pancake is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter.

WHAT YOU’LL NEED

INGREDIENTS

For pancakes:

400grams G/F plain flour

3 eggs

300 ml milk

100 ml single cream

For Fromage frais:

1 mascarpone cheese

1 ricotta cheese

fresh fruits (blueberry, blackberry, strawberry)

sweetener

THE how to make

INstructions

  1. Put g/f plain flour, 3 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug,
  2. Then whisk to a smooth batter.
  3. Set aside for 30 mins to rest if you have time, or start cooking straight
  4. Set a medium frying pan over a medium heat and spray little bit oil on it
  5. When hot, cook your pancakes for about 1 min on each side until golden, keeping them warm in a low oven as you go
  6. Serve with your favourite filling.

Fromage frais

  1. Blend together mascarpone and ricotta
  2. If using blackberry, blend them and pass trough sieve (to get rid of hard seeds)
  3. Mix with blended cheeses
  4. Add sweetener
