500 g lean pork strips
2 bags rice (125 g each)
1 courgettes
1 red peppers
1 aubergine
1 carrot
100 grams black olives
1 red onion
Any other vegetables of choice can also be added.I have added few garden peas and Romano beans ( flat green beans)
Gyros seasoning mix:
1 tbsp Dried oregano
1 tbsp Dried parsley
1 tsp Sea salt
2 tbsp Paprika
1 tbsp Lemon pepper: Lemon pepper may be substituted with a tablespoon of lemon juice added to 2 lbs of meat mixture.
1 tbsp Ground Coriander
1/2 tsp Black pepper
1 tsp Dried rosemary
1 tsp Dried thyme
1 tsp Cinnamon Powder
1/2 tsp Cayenne pepper: The cayenne pepper is optional!
150 ml olive oil
1/2 tsp garlic paste or two cloves fresh garlic
1. Cook rice
2. Mix all dried ingredients in the bowl together with olive oil and garlic paste
3. Add pork strips to the mix, rub marinate around meat and leave until rice is cooked
4 . Preheat the wok
5. Add marinated meat with all liquid from the bowl and flash fry for 2 minutes on high flame
6. Lower the flame and cook meat for another 5 minutes; keep stirring
7. Add all vegetables chopped into strips or chunks (as you like)
8 . Cover the wok and let it cook until the vegetables are soft
9. Add rice, stir to combine rice with the meat and vegetables
10. If the dish is too dry, you can add a little bit of meat or veg bullion
11. Serve hot with sprinkle of parsley
