500 g of gluten-free bread mix (I use gluten-free Flour Mix B by Schar)
400 ml of milk or yogurt +/- 50 ml (vegan products can be used)
½ cup of sugar
50 ml of oil
2 eggs (optional - if you don't use it, replace with 70 ml of milk)
30 g of fresh yeast or 2 heaped teaspoons of dried yeast
pinch of salt
300 g pineapple or other fruit
Crumbles: 4 tablespoons of flour, 4 tablespoons of sugar and 3 tablespoons of butter or dairy-free margarine (vegan option)
1. In a small bowl, mix the yeast, 2 tablespoons of sugar, 4 tablespoons of flour, and warm milk.
2. Let it sit for 15 minutes.
3. In a large bowl, mix the activated yeast with the remaining flour, sugar, eggs, and oil.
4. Cut pineapple into small pieces.
5. In another bowl, mix all the ingredients for crumbs.
6. Put the dough into a form and stretch it evenly with a wet hand.
7. Place the plums on the dough, press them lightly, and let them rest for 30-60 minutes for the dough to rise, depending on the room temperature.
8. Sprinkle the crumble on top of the dough and bake it for 40-50 minutes in an oven preheated to 180 degrees C.
9. Let it cool before serving.
