400 grams butter bean (drained)
5 tbsp preferred sweetener for baking
3 eggs
150 grams g/f self-raising flour
2 oranges
25 grams dessicated coconut
1 tsp g/f baking powder
Topping :
200 grams coconut cream
2 tbsp custard powder
150 grams almond flakes
2 tbsp sweetener
1.Preheat the oven to 180`C/350`f
2 Grease 18cm (7 inch) cake tin and line with baking paper
3.Pulse the butter beans, eggs and sweetener in a food processor
4.Continue processing while adding flour
5.Add orange zest and juice, coconut and baking powder
6.Pour mixture into baking tray
7.Bake for 35-40 minutes until golden
8.Remove cake from oven, leave to cool in the tin for 10 minutes, then transfer to a wire rack
and leave to cool completely
9.Whip coconut cream for two minutes, add custard powder and sweetener, spread on cake
and sprinkle with almond flakes
