400 g plain gluten-free flour
100 g cornflour
400 ml of milk or yoghurt
½ cup of sugar
50 ml of oil
2 eggs
A pinch of salt
30 g of fresh yeast or 2 heaped teaspoons of dried yeast
5 apples
1. In a small bowl, mix the yeast thoroughly with 2 tablespoons of sugar, 4 tablespoons of flour and warm milk. Set aside for 15 minutes.
2. In a large bowl, mix the working yeast with the remaining flour, sugar, eggs and oil. Let it rise for 25 minutes.
3. Peel the apples and grate them add to the risen dough, mix and let it rise for another 10-15 minutes.
4. Fry on a frying pan in gold colour on both sides.
The crumpets end up really moist and fluffy, not the usual g/f dry taste.
