Ingredients:
75g gram flour
1/2 tsp cumin seeds
1 tsp ground coriander
1 tsp turmeric
½ tsp salt
½ tsp mixed spice
4 tbsp water
50g potato, grated
100g onion, thinly sliced
5 tbsp oil
Poppadums
1.Line an oven dish with two sheets of kitchen paper.
2.Put the gram flour, cumin seeds, coriander, turmeric, salt and mixed spice into a large mixing bowl and stir to combine.
3.Add the water and whisk to make a paste.
4.Finely grate the potato into the bowl and stir to combine.
5.Finely slice the onion, breaking it into individual pieces as it goes into the bowl. Stir thoroughly.
6.Put the oil into a frying pan over medium heat.
7.Take a rounded spoon of the mixture and carefully slide it into the hot pan.
8.Cook the bhaji, turning it regularly, until golden brown on all sides.
9.Using a slotted spoon, lift the bhaji onto the prepared oven dish and cover to keep warm.
10.Repeat the cooking process with the remaining bhaji mixture.
