Honey cake can be made in many forms – from spiced with ginger, to glazed with chocolate, or soaked with a sugar syrup – there are many different recipesIt’s believed that German nuns in the 12th century invented the ancestor of the Miodownik cake in the form of gingerbread and honey cookies.This honey-flavoured cake soon developed and became popular in France as a honey cake. As the cake spread throughout Europe, more spices were added to the cake in different cultures.‍

WHAT YOU’LL NEED

INGREDIENTS

300 ml whipping creams,

200 ml custard (cold)

2 tbsp honey,

350g buckwheat flour,

200g millet flour,

150g rice flour,

1 tbsp baking soda,

2 tbsp milk, 2 eggs,

150 g icing sugar,

180g margarine,

THE how to make

INstructions

Preparation method:

1. Mix the flour with baking soda. Add margarine and chop everything with a knife. Add sugar and eggs. Put the milk and honey into a pot, heat it, stirring, until the honey

is dissolved. Leave to cool. Add to the rest of the ingredients and knead the dough.

2. Divide the dough into 3 parts.

3. Line the bottom of the baking tray with baking paper and spread by fingers 1 part of the dough (dough should cover tray in very thin layer ).

Bake in a preheated oven for about 15 minutes. at 180 ° C. Leave to cool.

In meantime prepare vanilla cream:

Vanilla cream: 300 ml whipping creams,100 ml custard (cold),

Whipp cream first then slowly add custard while still whipping.

4. Bake the second and third cake in the same way. Leave to cool.

Put the first cake into the baking tin. Spread vanilla cream on it. Cover with the second cake. Spread vanilla cream and cover with a third cake.

Leave the cake in a cool place until will get soft. The dough may become softer after 24 hours, and this may take up to 2 days. When the dough is soft, store it in the

refrigerator.
